"Knowing the fish fauna of Venice is an important moment for understanding the peculiarity of the lagoon ecosystem. Fish represent, in fact, not only a useful indicator for knowing the state of health of a sea, they are also a tool for understanding and investigating tradition, culture that absolutely cannot be lost. Sea creatures become the soul of our lagoon. Precisely for this reason I have chosen as an illustration a Venetian aperitif with the so-called fish cicchetti (San Piero, Schie, calmare, sepiolite, based, scallops, cappelunghe) and with the kind shade of white."
